玉米魚塊是一道港式料理,以前住在溫哥華的時候去港式餐廳都會點這道菜,吃起來玉米醬甜甜的,炸魚肉又外酥內嫩. 非常好吃,又下飯,而且又不難做.


Fried fish fillet with corn sauce is a very popular dish in Cantonese cuisine. Therefore, this is many people's favorite dish,because it's sweet,and tasty corn sauce,and crispy,tender fish meat. 


材料: 


魚片------------------------------------------4片


玉米醬---------------------------------------1


蒜末------------------------------------------3-4


辣椒末---------------------------------------1根


蔥末------------------------------------------適量


鹽---------------------------------------------少許


地瓜粉---------------------------------------適量


蛋---------------------------------------------1個


醃料:


醬油-----------------------------------------2大匙


香油-----------------------------------------1大匙


砂糖-----------------------------------------1大匙



Ingredients:


Fish Fillet------------------------------------4 fish fillets


Corn sauce-----------------------------------1 can of corn sauce


Minced garlic-------------------------------3-4 small cloves


Minced spice-------------------------------Appropriate amount


Minced green onion-----------------------Appropriate amount


Salt------------------------------------------1 teaspoon of salt


Egg------------------------------------------1 large egg


Sweet potato starch-----------------------Appropriate amount


Marinades for fish fillets:


Soy sauce-----------------------------------2 tablespoons of soy sauce


Sesame oil----------------------------------1 tablespoon of sesame oil


Brown sugar--------------------------------1 tablespoon of brown sugar


做法(Directions):

 

1.把蒜頭,辣椒,蔥,切成末備用.

1.Mince the garlic,spice,and green onions.

 

2.把魚片洗淨後,切成小塊狀,然後再放入醬油,香油,砂糖,抓勻醃製1小時.

2.Cut the fish fillets into small pieces, and marinate the fish with soy sauce,sesame oil, and brown sugar for 1 hour.


3.把蛋打散,再把醃好的魚塊放入蛋液中.

3.Beat the egg with fork,then dip the marinated fish in the beaten egg.

 

4.把沾好蛋液的魚塊再沾上地瓜粉.

4.Coating the marinated fishes with sweet-potato starch.

 

5.把油倒入鍋中開中火加熱,等油熱後把魚塊放下去炸,油其實可以不用放很多,然後可以半煎半炸.炸的時候火侯不要太大才不會炸到焦掉.魚塊油炸至表面呈現金黃色澤即可撈起.

5.Pour the oil in the frying pan, then turn on medium heat. When the oil in the pan is hot enough, put the marinated fishes down in the frying pan.Then, wait till the fishes turn golden brown color. Be careful, don't let the fishes burn.

 

6.把油倒入鍋中,然後再把切好的蒜末,辣椒末,蔥末,倒入鍋中爆香.

6.Pour the oil in the frying pan,then add the minced garlic,spice,and green onion in the frying pan.

 

7.把玉米醬到入鍋中炒熱,之後再把炸好的魚塊放入,再撒上少許的鹽拌炒一下,然後立即盛出.

7.Pour the corn sauce in the frying pan,then add the fried fishes,and a little bit of salt in the frying pan and cook it for 5 seconds.


8.這樣這道料理就完成啦!
